Tasting Notes - Fresh and fruity white flesh fruits like peach and pear along with citrus notes showing good minerality. This Chablis also makes a good partner to traditional Burgundy recipes such as ‘jambom persillé’ (ham with parsley), and is ideal with a fresh bowl of oysters, crab cakes or some guacamole and tortilla chips!

Producer - This partnership between Gilles and Nathalie Fevre, began when they met at university. Gilles oversees the viticulture and Nathalie takes care of the vinification. Their daughter, who is a winemaker in her own right, has now joined the fold. They have 50 hectares of vines and they have become a producer to watch in the area, making extremely fine wines, in stainless steel, and even, happen to be vegan. This Chablis comes from parcels situated beside the village of Fontenay-Près-Chablis, at the very heart of Chablis’ vineyards, on high plains or steep hills, all their Chablis is grown on stony soils (Kimmeridgian Limestone) which allows for a moderate production. Most of the vineyards are between 15 and 25 years old. Some parcels were planted by Gilles’ great grandfather, Marcel, around 1950/1960.
